I hit this one with a 10s preinfusion and pulled to around a 1:2.5 ratio. It had a pretty high acidity but I wasn’t quite able to get much flavor separation. Not bad straight up, just not my favorite. This roast as espresso does much better paired with milk. In a cappuccino, I enjoyed it quite a bit, made for a more complex drink that still was approachable
