Updated review as this one has had some time to rest more. Went with a different Deep27 recipe this time. Long 1min bloom with a single long pour to a 1:15 ratio at 199f. This brought out some more clarity and opened up the flavor notes on this roast. Still has a fermented backbone from the natural process, but a touch more tea like flavors and subtle mixing of berries. Still a fantastic deal for this gesha. I really can’t wait to be able to log brew metrics on this app *wink wink*
