Boom, figured this out on espresso. Went slightly coarser on the grind, 10s preinfusion, and went for a 1:2.8 ratio. Acidity tamed down, flavor balance was better and it sat on the tongue so well. Super super tasty. For now I can log these metrics in the notes, but hopefully that changes soon as it will make the experience sooooo much nicer
