This Pink Bourbon decaf comes from Finca Las Flores, farmed by Jhoan Vergara in Acevedo, Huila, Colombia, at an altitude of 1,750m, showing aroma notes of dried fruit, lavender, malt, and herbal character. Before decaffeination, the coffee undergoes a multi-stage fermentation: 36 hours anaerobic, followed by 12 hours of oxidation, then a further 36 hours of anaerobic fermentation after depulping. Decaffeination is carried out using sugarcane, a method common in Colombia designed to preserve as much of the green coffee's character as possible, after which the coffee is subjected to a thermal shock for 30 minutes at 50°C and dried for 36 hours in a controlled dehumidifier. The coffee was harvested in October 2025. Finca Las Flores is a family project of the Vergaras established in 1990, and Jhoan Vergara won the "Master of Coffee" competition in 2019 with a Pink Bourbon, after which the farm became a notable name in the international specialty coffee scene.
