This Java variety coffee from Finca Las Flores, farmed by Jhoan Vergara in Acevedo, Huila, Colombia, at an altitude of 1,750m, shows aroma notes of lemongrass, passion fruit, ginger, and mango. It is processed using a thermally shocked washed method: cherries are first oxidized for 24 hours while still intact, allowing controlled enzymatic and microbial activity to develop aromatic precursors, sweetness, and structure. After pulping, a 60-hour fermentation follows, after which the coffee is washed with 55°C warm water, a thermal shock that stabilizes fermentation and helps fix the desired aroma. The lot is then dried for 50 hours in dehumidifying machines, ensuring uniform moisture reduction and minimizing the risk of uncontrolled post-fermentation, reaching a final moisture content of 11%. The coffee was harvested in October 2025 and imported by Equation.
